Tilapia Fish Stew Recipe

Tilapia fish fillets cut into 2 inch pieces (1-1/2lb), touch of dry oregano, Tabasco, thyme, pepper and salt, dry white wine (2/3c), clam juice (8oz), tomato paste (2tsp), fresh chopped tomato (1c), chopped fresh parsley (2/3c), chopped garlic (2large cloves), chopped onion (1c), olive oil (6tbsp).
Method of preparation:-
Take a large heavy pot, place it over medium-high heat. Heat olive oil in it. Then add the chopped onion and garlic in the pot and then sauté them for about 4 minutes in the oil. To add the flavor you can add some celery and mushrooms. Add parsley and stir them for 2 minutes. Then add tomato and tomato paste and keep it to cook for more two minutes. Now add dry white wine, clam juice and fish fillets in the pot. Reduce the heat to low and keep it to simmer until the tilapia fish gets cooked. Add seasoning and salt according to taste. Put the cooked fish in a bowl and then serve it.
