Jerked Salmon Recipe

Ingredients
Salmon Fillets (1 1/2pound), jerk rub, cinnamon (3/4tsp), thyme (3/4tsp), cayenne (1tsp), black pepper (1tsp), ground allspice (1tsp), dried onion flakes (1tbsp), onion powder (1tbsp), nutmeg (1/4tsp), seafood stock (1c), jerk rub (1tbsp), minced ginger root (1tbsp), tamarind (1tbsp), honey (2tbsp), jerk barbecue sauce.

Method of preparation:-
jerked-salmonTake a bowl, mix together the rub ingredients in it. Keep 1 tablespoon for the sauce and rub the remaining over the surface of the salmon. Keep it for 1 to 2hours. Now prepare the smoker for 1 hour at 200 degrees. Use the apple wood for the smoke. Keep the salmon fish at the room temperature for about 20 minutes before placing it in the smoker. Now place the salmon in the smoker for about 1 hour or until it gets cooked. Take a saucepan, mix all the ingredients in the pan t make the sauce. Cook it over high heat. When it boils then reduce the heat to low and keep it to simmer until it gets reduce to third. Keep it warm. When the salmon gets cooked carefully remove it and place on the platter. Serve it with sauce on the side.
