Grilled Jamaican Jerk Tilapia Packets Recipe

Ingredients
1. Tilapia fillets (4 about 6 ounces)
2. julienned, red or orange bell pepper (1c)
3. olive oil (3tbsp)
4. chopped fresh cilantro (3tbsp)
5. minced garlic (3cloves)
6. seeded and chopped poblano peppers (2)
7. chopped white onion (1c)
8. aluminum foil (4large pieces)
9. Jerk seasoning (3tbsp)
10. salt and black pepper (to taste)
11. fresh lemon juice (2tbsp)

Method of preparation:-
1. First heat grills on medium high heat. Take pieces of foil and then place one piece of tilapia on each piece of foil.

2. Take a small bowl, mix olive oil, garlic, cilantro, lemon juice and jerk seasoning in the bowl. Apply this mixture on both sides of the fish.

3. Place equal portion of bell pepper, onion and poblano on each piece of fish. Now season it lightly with salt and pepper. Crimp the edges of the foil over and then seal the packets. Place the packets on grill and cook them for 10 minutes.

4. Turn and cook for more ten minutes. When the fish gets opaque and vegetables get tender then remove the packets from the heat. Keep the packets for about 5 minutes before opening.

Preparation time 12 minutes.
