Crispy Fried Catfish Recipe

1. Evaporated milk (1/2c)
2. catfish fillets (6 each fillet is about 6to 8 ounces)
3. yellow cornmeal (1/2c)
4. flour (1c)
5. paprika (2tsp)
6. dash pepper (1)
7. bacon (10 to 12 slices)
8. salt (1tbsp)
Method Of Preparation:-
1. Take fish, clean it, wash and then pat dry it. Take a bowl, add milk in it and then mix pepper and salt in it.
2. Take a shallow dish, mix cornmeal, flour and paprika in it. Now dip the fish in milk mixture and then roll it in flour mixture.
3. Take a frying pan, fry bacon slices in it until they get crispy. Drain bacons on the paper towels, leaving the bacon drippings in the pan.
4. Fry fish for about 4 minutes in the hot drippings. Use spatula to turn it carefully and again fry it for about 4 to 6 minutes until it gets brown color and flake easily with fork. Then drain it on paper towels and serve it with crispy bacons.
