Crisp Fried Surmai Fish Recipe

Ingredients
1. Thicket slices of Surmai fish (6-8)
2. peppercorns (8)
3. ani seeds (25gms)
4. cumin seeds (15gms)
5. cinnamon (20gms)
6. black cardamom (20gms)
7. cloves (8)
8. ginger (25gms)
9. chilly powder (1 1/2tsp)
10. extracted juice (3lemon)
11. oil (as required)
12. salt (to taste)

Method of preparation:-
1. Take surmai fish slices, wash them very nicely with water and place them on paper towels so that the water gets absorbed in the paper.

2. Pound finely cardamom, ginger, cloves, cumin, cinnamon, ani seeds powder and peppercorns. Mix these in the lime juice along with chili powder and salt to taste. Cover the fish slices in this mixture and keep it to marinate for half an hour.

3. Take a frying pan, place it over heat. Heat the oil in it and then fry the fish slices in hot oil. Fry 2 or 3 slices at a time until they get crispy and brown. Then drain the fried fish from the oil and serve it hot with any chutney.
