Small fish or shell fish like flounder, bass, perch, clams, whiting etc.), toast, sliced potatoes, (6med.), chopped parsley (1bunch), peeled tomatoes or canned equivalent (6large), sliced onions (6large), olive oil (3/4c).
Method of preparation:-
Take oil, pour it into a casserole or Dutch oven over low heat. When the oil gets hot then add onions in it and sauté them. When the onions get soft then add tomatoes, parsley and salt and pepper. Keep it to simmer for about 15 minutes. Put a layer of sliced fish then potatoes and then the remaining fish. When the fish and the potatoes get cooked then serve it immediately in the same casserole over the slices of toasted bread.
