Fish Stew Recipe

1. Fish fillets, halibut, cod, sole etc. cut into 2 inch pieces (1 1/2lb)
2. dry white wine (2/3c)
3. clam juice or shellfish stock (8oz)
4. tomato paste (2tsp)
5. fresh chopped tomatoes (1c)
6. chopped fresh parsley (2/3c)
7. chopped garlic (2large cloves)
8. chopped onion (1c)
9. olive oil (6tbsp)
10. dry oregano, Tabasco and thyme, (a touch)
11. pepper and salt (to taste)
Method of preparation:-
1. Take a heavy large pot, heat olive oil in it. Add chopped onion and garlic and saute them for about 4 minutes. Add parsley and mix them for 2 minutes.
2. Add tomato and tomato paste and then cook it for more 2 minutes. Add the clam juice, fish and dry white wine.
3. Keep it to simmer until the fish gets cooked for about 8 to 10 minutes. Add seasoning and salt to taste. Now place it in the bowls and serve it.
