Roasted Rosemary and Basil Cod Fish Recipe

1. Cod fish fillets (2)
2. rosemary, minced (1stem)
3. minced garlic (4cloves)
4. finely chopped celery (4 small stalks)
5. white onion, minced (1med.)
6. min leek (white part only), minced (1)
7. soy sauce (2tbsp)
8. fresh chives, minced (1tbsp)
9. ginger root, minced (2tsp)
10. lemon juice (1 1/2tbsp)
11. fresh basil leaves, minced (4)
12. salt (to taste)
13. pepper (to taste)
Method Of Preparation:-
1. First heat the oven to 350 degrees F. Take a bowl, add rosemary, lemon juice, chives, soy sauce, basil, pepper and salt in it. Mix all the ingredients and then put fish fillets in this mixture. Keep it aside for about ½ an hour to marinate the fish.
2. Take an oven proof pan with cover. Saute garlic, onion, celery, ginger root and leek in it until the onions become soft. Then add cod fillets in it and cook them until they get light brown color.
3. Then take out the pan from oven and cover it. Bake it for about 25 to 30 minutes. Serve the fish with cooked rice. Keep the remaining marinade to boil in the pan and then pour it over the cod fish and rice.
