Roasted Cod With Cherry Tomatoes, Basil and Mozzarella Recipe

1. Cod fillets, skinned and pin boned (2 about 8 ounce)
2. fresh basil leaves, picked from stem (1 handful)
3. red and cherry tomatoes, halved (2handful)
4. freshly ground black pepper (to taste)
5. sea salt (to taste)
6. olive oil (1 tbsp)
7. grated parmesan cheese (1handful)
8. finely sliced buffalo mozzarella cheese (1 ball)
Method Of Preparation:-
1. First heat the oven to 425 degrees F. Take a dish of earthenware or a greased roasting pan. Place cod fillets in roasting pan and sprinkle half tablespoon olive oil over it and then season it.
2. Then place basil, tomatoes and slices of mozzarella on the top of the cod fillets. Sprinkle parmesan cheese, sea salt, black pepper and rest of the olive oil over it.
3. Now place the roasting pan in oven and bake it at 425 degrees F for about 15 to 20 minutes until the fish gets golden color. Then take out the pan from the oven and serve cod in a serving dish.
