Curried Codfish Recipe

Ingredients
1. Codfish (2lbs)
2. flour (1tbsp)
3. onion (1med. Size)
4. white stock (2c)
5. vegetable shortening (1/4c)
6. chopped coconut (2tbsp)
7. lemon juice (1tbsp)
8. curry powder (2tsp)
9. plain boiled rice (2c)
10. pepper (to taste)
11. red pepper (to taste)
12. salt (to taste)

Method Of Preparation:-
1. Take cod, wash and dry it and then cut it into pieces of 2” squares. Take a saucepan, place it over heat and then melt shortening in it. Put cod pieces in the pan and fry them and then take them out and keep them aside.

2. Now put the sliced onion, curry powder and flour in the saucepan and then fry them in shortening for about 10 minutes by stirring regularly. Then add coconut and white stock in it and mix it until it gets boil and then keep it to simmer for about 20 minutes.

3. Now strain the mixture of the pan and then again put it in the pan, add salt,red pepper and pepper according to taste and lemon juice in it and then keep it to boil.

4. Now put fish in it, cover the pan closely and then cook it for half an hour. Stir the fish irregularly while cooking to prevent it sticking to the bottom of the pan. Now transfer the fish into the hot plate and serve it with rice.
