Creamed Codfish Recipe

Ingredients
1. Heavy cream or cream fraiche (1/2c)
2. cod fish (2 pounds)
3. garlic, pressed (2cloves)
4. olive oil (1c)
5. water
6. lemon juice (2tbsp)
7. fried bread slices
8. black pepper (1/4tsp)
9. salt (1tsp)
10. halved potatoes (3med.)
11. sliced lemon (1)

Method Of Preparation:-
1. Take a pan, place fish in it and cover it with water. Add slices of lemon in it place it over high heat and then keep it to boil. When the foams appear on the surface then cover the pan and turn down the heat to low.

2. Now keep it to simmer for 15 minutes. Drain the fish and keep it warm. In the reserved liquid, add potatoes and cook them for about 30 to 40 minutes until they get cooked. Then drain potatoes in a bowl and mash them and then keep them aside.

3. Remove the skin and bones of the fish. Take a pan, heat ½ cup of oil in it. Take a Pyrex dish, place fish in it and mash it with oil. Then mix mashed potatoes in it to make a smooth paste. Now take rest of the oil and add it into the mixture and again beat the mixture to form smooth paste.

4. Then sprinkle pepper, salt, garlic and lemon juice in it and mix crème fraiche or heavy cream in it. Take double boiler; place the mixture on the top of it. Place the boiler over hot water and stir the mixture until it gets hot.

5. Take a serving dish; make mounds of the codfish mixture and place on the dish. Then decorate it with fried bread. Now creamed codfish is ready to serve.
