Codfish With Scrambled Eggs Recipe

Ingredients
1. Beaten eggs (8)
2. salt cod (1/4 pound, soak for 18 to 24 hours, change water several times)
3. Annatto or achiote oil (2tbsp)
4. yellow onions, peeled and finely chopped (3 med.)
5. peanut oil or freshly rendered lard (2tbsp)
6. salt and freshly ground black pepper (to taste)
7. cold water (4c)

Method Of Preparation:-
1. Drain the soaked cod and place it in a saucepan. Add 4 cups of fresh water in the pan to cover the fish. Cover the pan and keep it to simmer for about 15 minutes and then drain it. Keep the fish to cool and then flake it and keep it aside.

2. Take a large frying pan, heat peanut oil or lard in it. Saute onions in it until they get light brown color. Now add achiote oil and salt cod in it.

3. Cook it over standard heat and then add eggs in it. Cook it until the eggs get cooked and then mix salt and pepper in it according to taste.
