Boston Cod Pie Recipe

1. Frozen cod fish fillets (1lb)
2. pie crusts (2)
3. pimiento, chopped (1tbsp)
4. vermouth (1tbsp)
5. walnuts, chopped (1/4c)
6. dry mustard (1/4tsp)
7. milk or half and half (2c)
8. flour (4tbsp)
9. butter (4tbsp)
10. minced onions (2tbsp)
11. minced celery (2tbsp)
12. bay leaf (1)
13. salt (1/4tsp)
14. water (1c)
Method Of Preparation:-
1. Take a large saucepan of 10 inch; add bay leaf, salt and 1 cup of water in it. Keep it to boil and then turn down the heat to low. Keep it to simmer for about 6 to 8 minutes.
2. Now take out the fish from liquid and drain it on paper towels and then flake it with fork. Take a pan, heat butter in it and then saute onion and celery in it.
3. Then mix flour in it and cook it for about 30 seconds over low heat. Now add dry mustard and half and half in it. Cook it over low heat by stirring regularly until the mixture gets thicken.
4. Take off the pan from heat, mix pimiento, vermouth, nuts and flaked fish in it. Take a pie plate of 8 inch, line it with pastry. Place fish mixture on it and cover it with top crust.
5. Place the pie plate in preheated oven and bake it at 400 degrees F for about 25 to 30 minutes. Then take out the plate from oven and keep it for about 10 minutes and then cut the cod pie and serve it.
