Cod Fish With Nectarine Salsa Recipe

1. Cod fish fillets (4 to 6 oz)
2. butter (1tbsp)
3. freshly ground black pepper (to taste)
4. kosher salt (to taste)
5. olive oil (2tbsp)
6. honey (1tbsp)
7. lime juice (1tbsp)
8. finely diced jalapeno pepper (1)
9. cucumber (1large)
10. nectarine (3med.)
Method Of Preparation:-
1. Take nectarines, peel them and then cut them into pieces and then put them in a bowl of medium size. Then take cucumber, peel it and cut it into pieces and mix with nectarines.
2. Now add honey, lime juice, jalapeno pepper in the bowl of nectarines and mix them properly. Season the salsa with pepper and salt and then keep it aside.
3. Now take cod fish, sprinkle salt and pepper on both sides of it. Take a large frying pan, heat butter and olive oil in it. Add cod fish in the pan and cook it for about 3 to 5 minutes on each side or cook it until it gets flake easily with fork. When the fish gets cooked then serve it with prepared nectarine salsa in a serving dish.
