Catfish In Cornmeal Recipe

1. Catfish fillets (3 about 6 ounce)
2. grated lemon peel (1tsp)
3. lemon juice (1tbsp)
4. heavy cream (6tbsp)
5. vegetable oil (3tbsp)
6. salt and pepper (to taste)
7. thyme (2tsp)
8. yellow cornmeal (1/4c)
Method Of Preparation:-
1. Take a large bowl, mix yellow cornmeal, thyme, lemon peel, salt and pepper in it. Reserve 1 teaspoon of this mixture.
2. Take a large frying pan, heat oil in it over medium heat. Take fish, brush 1 tablespoon of cream on both sides of fish and then coat with cornmeal mixture.
3. Place the fish in pan and saute it for about 4 minutes from each side until it gets cooked and changes to golden brown.
4. Take two serving plates, place fish in the plates. Now deg-laze the frying pan with lemon juice and scratch out the brown spots.
5. Then mix rest of the 5 tablespoon of heavy cream and 1 teaspoon of cornmeal mixture in the frying pan. Keep it to simmer for about 1 minute until it gets slightly thickened. Now pour this mixture over the catfish in the serving plates and then serve it.
