Cod Baked With Green Bell Pepper and Tomatoes Recipe

1. Cod fillets, washed and patted dry (1 ¼ pounds)
2. diced tomatoes, drained (1can about 14.5 ounce)
3. green bell pepper, seeded and julienned (1)
4. minced white onion (1/4c)
5. garlic, minced (2cloves)
6. olive oil (1tbsp)
7. cooking spray
Method Of Preparation:-
1. First heat the oven to 425 degrees F. Take a large frying pan, place it over standard heat and then heat olive oil in it. Add onion and garlic in it and saute them for about 2 minutes.
2. Then put tomatoes in it and cook them for about 12 minutes until the sauce becomes thick. Take fish fillets, trim them, take off the skin and remove the bones with pliers.
3. Take a baking dish of 3 quart, coat its bottom with cooking spray and then place fish fillets on it in a layer. Spread tomato sauce over the fish and then spread bell pepper on the top.
4. Cover the dish and place it in the preheated oven and bake it at 425 degrees F for about 15 minutes until the fish gets flake easily with fork. When the fish gets cooked then takes it out from the oven and serves it hot.
